Video Ceramics and fermentation

What do bread, cheese, soy sauce, yoghurt and wine have in common? They are all made using a process called fermentation. Fermentation is a chemical change that occurs in vegetable and animal products in an oxygen-free environment with the right yeasts, moulds or bacteria. Emma is a ceramicist who specialises in making fermenting vessels. She shows us a special pot she made for fermenting cabbage and a mould for making cheese. How does Emma ferment cabbage?
