Test market demand and local competition for a café business. Survey customers representing market groups and record their preferences for menu items, opening hours, look and feel, and the amount they have to spend. Investigate similar cafés already operating. Identify the business choices most likely to succeed. For example, open an elegant café at 6-9pm serving steak, chicken and stir-fry dishes. Look closely at sales figures and make adjustments.
